Canning Time Again!



This year has really flown by.  I can't believe it is August already and that here we are again into canning season.  We had a lot of failures in the garden this year again, but also some wonderful successes. Some of our best crops this year have been broccoli, cabbage, cucumbers, okra, cantaloupe, and even a small amount of corn.  We had some absolutely delicious corn on the cob from the garden for dinner tonight!



I have yet to put up any of the cucumbers but got the okra pickled tonight.  I also put some in the freezer for future soups and plan to harvest the rest and either freeze more and/or make some yummy fried okra, YUM!

Hopefully, I can put up some bread and butter pickles and some sweet relish tomorrow.  I also hope to start the Christmas pickles!  I had never heard of these but a friend shared some with me and they are absolutely divine!!!  You must look the recipe up and try some.  The best part is that it is preferable to use those HUGE cucumbers you either missed or just failed to pick off the vine on time.
